You can deactivate any existing tax rate by changing its Type configuration to Disabled. After a tax rate has been disabled, it is not used by the Toast platform to calculate tax amounts for orders.
An example of when you may want to disable a tax rate is if you are in the process of creating a new tax rate, and you disable it until because but it is not ready for use.
To disable an existing tax rate

Choose Menus > Menu management > Tax rates setup to open the Tax rates page.

On the Tax rates page, select an existing tax rate.

In the Type section, select Disabled.

Save and publish your changes.
You can reactivate the tax rate by using the same procedure, except that you select its original tax Type.
